Tony's Ass Backwards Superbowl Ribs


  • 2 slabs country-style pork ribs
  • Salt & pepper
  • 2 jumbo sweet onions
  • 1/2 garlic bulb
  • 1 cups dark brown sugar packed
  • 1/2 cup dark molasses
  • 2 28oz can tomato sauce
  • 2 cups apple cider
  • 1/4 cup apple cider vinegar
  • 1/4 cup Worcestershire sauce
  • 1/4 cup light soy sauce
  • 1/4 cup olive oil
  • 1 tbs dry mustard
  • 2 tbs chili powder
  • 1/2 tbs cayenne pepper
  • 1/2 tbs ground ginger

Cut up ribs and salt and pepper to taste. Place on hot grill and sear. Remove and set aside. Rough chop onions and garlic. Sweat in 6 1/2 qt stock pot with olive oil until tender. Add dry mustard, chili powder, cayenne pepper, and ginger. Stir until blended. Add tomato sauce, brown sugar, apple cider, apple cider vinegar, Worcestershire sauce and soy sauce. Stir ingredients untill blended. Simmer on medium heat stirring frequently for 60 minutes. Remove from heat. Preheat oven to 275 degrees. Place ribs in baking tray. Pour BBQ sauce over ribs and tightly cover with foil. Bake for three hours. Raise oven to 350 degrees, remove foil and continue to bake for one additional hour turning ribs once. Remove from oven and let stand for 15 minutes. Serve with plenty of ice cold beer during the game!
